Under Inventory Settings, uncheck the fields which you WANT TO UPDATE when updating products in QuickBooks Online:

Inventory Tracking - Changes in a product’s inventory status (Inventory <-> Non-Inventory)

Quantity - Changes in the current quantity of the product in-hand *

Price - Changes in the sale price of a product
-
Name - Changes in the Product Name
-
Description - Changes in the Product Description
-
Taxable - Changes in the Product Taxation (Taxable or Tax-Exempt)
Note: By default all fields are selected.You can customize the same according to your business requirement by unchecking them here.
* This setting only applies to manual changes made to product quantity in hand
